Serves 6-8
Ingredients:
1. 1 medium size whole chicken, about 2lb 3oz(1kg);
2. 1kg/2lb 3oz carrots, chopped;
3. 1kg/2lb 3oz onions, chopped;
4. 3-4 spring onions, finely sliced;
5. 2 inch fresh root ginger, minced;
6. 4-5 teaspoons salt, or to taste;
7. 4 garlic cloves, minced;
8. 1 tablespoon dry sherry;
9. fresh chopped parsley for garnishing;
10.ground black pepper.
Directions:
1. Wash the chicken and place the chicken in cold water. Bring the water to boil, discard the water and cut the chicken into 10-12 pieces.
3. Add the minced root ginger, dry sherry, chopped carrots, and chopped onions. Bring the soup back to boil then reduce the heat to simmer for 2-3 hours, topping up with water as necessary.
